I already collected every single item in DS1, so i know how all the armour looks like, it's just i didn't check it really hard to find replacement.
Wear Giant Set hand, leg, and body. Wear Mask of Father. Use Grass Crest Shield and a chaos enchanted Zweihander (2-hand it always). Complete with Havel's Ring and Ring's of Favour and Protection...
Black Iron Set in particular is easy to mix and match other armour piece with. You can just keep the torso of Black Iron and use other armour for hand, helmet, and legs and it'll probably look good.
I used Black Iron torso, Holy Set legs, Elite Knight hands, and Thief Set head for quite a while until I got tired of medium roll. It's a decent combo that looks nice and got an ok colour variation.
Cleric Set would also look good. Or at least the upper body looks ok. The lower body part can be a bit awkward when running probably due to budget/tech limitation at the time. Though it looks good when standing still.
OP is best getting the heaviest armours to mix and match. Mugenmonkey is best for planning a build, but can also be used to min/max already built characters.
