Rhea has two ways of dying.
Logan dies
Crestfallen dies if you finish his dialogue.
Solaire is, for now, alive. I don't know where it is supose to die as you say "depends on you" (I prefer not to know hahaha)
Griggs I don't know who he is neither hahaha (I know most of them by their attributes)
Domhall the same
Petrus it is yet alive, always in Firelink haha
Laurentius force me to kill him haha
Patches I don't know who he is
Sigmeyer dies (or in Lost Izalith or later when his child)
The pyromancer dies
Quelana and Daughter of Chaos don't die.
Sieglinde doesn't die and if you help she even gets to say goodbye to her father
Oswald doesn't die
The Anor Londo firekeeper depends on you
No one who sells you anything dies - blacksmiths or merchants
Dusk does die (of old age since she lived in the past)
Logan, Rhea, and other sellers die after sellomg everything WTF hahahaha

In general most of the characters are Undead and at risk of Hollowing. Hollowing seems to occur when a character either dies too much or loses their purpose.
For example, Laurentius hollows when you tell him of the Great Chaos Fireball pyromancy. You can find him in the swamp. It seems to me that he was either rejected from the Chaos Servants covenant or rejected as a new apprentice by Quelana, or both.
Some never go Hollow, like Marvelous Chester, but those usually don't have distinct questlines.
So complete questline = loss of purpose = Hollow.
Not always but often. If you want to keep them sane, don't complete their questlines, allow them to keep their purpose in life.

I don´t like that they all die by finishing the game, but not doing everything it was supose to be done... Poor NPCs, I guess they are gonna die again in my NG+ hahaha
