If you're talking about ways, to avoid fall damage in general, only with Fall Control[darksouls.wikidot.com]. Though, like in the other games, at a certain height-threshold, you will always die, no matter what.
Fall damage is % based up to a certain distance, then it's auto-die past that. The Fall Control spell will prevent non-lethal fall damage. One merchant sells Prism Stones that you can throw off a ledge to check heights. If you hear a ping, the fall distance is lethal.
