On the other hand if you truly like a challenge and don't get frustrated too fast when learning the mechanics of the game then i recommend you start with DS1 because of the way it introduces the story and the overall atmosphere of the world in a very subtle yet intricate way. Progressing through the world will just make you want to explore more and even once you've defeated the final boss you will then realize the actual complexity and depth the world hold and discover all the secrets that you missed, making you want to replay it again. I suggest you don't use any guides on your first playthrough and try to use your own curiosity and wits to overcome the obstacles, although if sometimes you get truly stuck then just ask someone who has already played the game for a hint, but don't try to get the full answer because in my opinion it's much more fun
and rewarding when you discover something on your own.

But yeah, gameplay-wise DS3 is much more refined.
DS2 has the best pvp by far. It is focused on pvp.
it might be a good entry point to the souls series, but far from the best.
i think ds2 is my favorite, smartest enemy placements, great shortcuts, non linear world, good stamina management and such that really represents the core concept of souls combat to me.
also just a ton of armors and weapons and bosses and secrets. it goes on and on.
actual quality advice. Play them in order and then judge which you would like to spend time with. Also if you have a ps3 play souls where it started, Demon Souls.
