is there any set you can upgrade to be better than the one from Havel?
There are mainly 2 things that matter for armor: Poise/Weight and physical defense/Weight. Elemental defenses are nice too, but they matter much less often.
Havel's Armor has the best Poise/Weight in the game, but it has absolutely terrible Defense/Weight. Pretty much the worst in the game when comparing upgraded sets.
Among the heavy armor sets, Giant Armor has the best Defense/Weight once it's upgraded. You can buy it from the blacksmith in Anor Londo. The Giant set is also notable for having the absolute maximum possible defense in the game.
In general, there is a trend that lighter armor sets have lower defense, but a better defense/weight ratio and better elemental defense than heavy armor sets.
Here are a few standout armor sets to consider:
1) Brigand/Bandit Set. Very light armor. Obtainable pretty early in the game. Has virtually the best Defense/Weight of any set in the game, and has much higher total defense when upgraded than any other light armor.
2) Knight Set. Obtainable early in the game. Has better Defense/Weight than almost all medium and heavy armors. Has better Poise/Weight than all medium armors too. Much higher defense than every lighter armor set.
3) Iron Set. Pretty much the Knight Set's only rival in its category. Obtainable very early if you murder Solaire. The Knight Set is a little better but a little heavier. All in all the two are comparable, so don't murder Solaire you monster!
4) Giant Set. Highest defense in the game, better Defense/Weight than MOST heavy armors, better Poise/Weight than most heavy armors, solid elemental defense too. It also hits a good poise threshold (just over 75) if you wear the giant chest, leggings, and gloves. This keeps your helmet slot open for important things like the Mother Mask.
5) Havel's Set. Lousy Defense/Weight but has the best Poise/Weight in the game.
6) Stone Set. 2nd best Poise/Weight in the game and is available very early.
Otherwise explain why having 83,2% max load I need to stay under 20 % to roll properly?
Medium Roll
Players have a medium roll if their equipment weight is 25%~50% of their maximum equipment load. Just like the fast roll, there are several different categories that affect speed of recovery after the roll
Fastest medium roll - At which the player is between 25% and 33.3% (1/4 and 1/3) of their maximum equipment load.
Average medium roll - At which the player is between 33.3% and 41.6% (1/3 and 5/12) of their maximum equipment load.
Slow medium roll - At which the player is between 41.6% and 50% (5/12 and 1/2) of their maximum equipment load.
Medium rolls possess almost as many invincibility frames as fast rolling, per roll.
