Should i buy Dark Souls remastered or Dark Souls 3
I have never played a dark souls game. Which one do you recommend I buy?

I'd play them in order. DS:R > Scholar > DS3

I'd strongly recommend playing DS:R first, because I did the mistake of playing Sekiro and DS3 first, and now I'm suffering in DS:R. AAAAAAAAA

I started with DS3 and I'm glad I did. It is MUCH easier for a noob to step into and because DSR is "older", I might not have appreciated as much if I started with it due to it's slower more deliberate pacing. I love the entire series by the way, but I feel 3 is just more accessible as well as more player base if you need help with anything.

You can use the refund system on Steam to try all of them for up to two hours I believe. It will take up to 72 hours to refund to a credit card though.

Dark Souls Remastered is still my favorite. There's a few randomizers (Items, Enemies, and Fog Gates) if you want surprises and more challenge. Just be sure you're playing offline if you're using any mods though.
Dark Souls 3 is a lot more accessible in terms of game mechanics. Upgrades, the way for progression, how online and how you get more heals are all very streamlined in 3. However, it’s the most difficult in terms of actual combat. Enemies are faster and have more complex movesets. The story also makes more sense if you’ve played the previous games, though doing so isn’t necessary.

Dark Souls Remastered is the opposite. Combat is relatively easier (though will still be a challenge for someone new), but the rest of the game is a lot more open and game mechanics are very odd and unique as they are tied to the narrative. The story is easier to grasp, though.

In essence, 3 is reminiscent of an old arcade or sidescroller action game. Everything is difficult but straightforward.

1/Remastered is more about exploring and coming across challenge. Everything sort of revolves around your own pace.

i also started with sekiro thinking it was a good idea

DS1, DS2 scholar, bloodborne. I played DS3 a lot but ultimately it made me quit any other dungeon crawler/"souls like". They removed passive stun resistance from armor in DS3 which takes a lot away from the game. In DS1 i felt like a powerful warrior fighting powerful enemies. In DS3 its hard to feel that way when you get stunned to death by things 1/6th your size.
Will people defend it? Yes. Are there workarounds to these enemies and did i use them? Yes.
Is that the point?
No.

TLDR: yea get ds1. And remember to cut off everything's tail if it has one.
