Dark Souls Remastered is still my favorite. There's a few randomizers (Items, Enemies, and Fog Gates) if you want surprises and more challenge. Just be sure you're playing offline if you're using any mods though.
Dark Souls Remastered is the opposite. Combat is relatively easier (though will still be a challenge for someone new), but the rest of the game is a lot more open and game mechanics are very odd and unique as they are tied to the narrative. The story is easier to grasp, though.
In essence, 3 is reminiscent of an old arcade or sidescroller action game. Everything is difficult but straightforward.
1/Remastered is more about exploring and coming across challenge. Everything sort of revolves around your own pace.
Also do not skip DS2, its a foolish decision.
Will people defend it? Yes. Are there workarounds to these enemies and did i use them? Yes.
Is that the point?
No.
TLDR: yea get ds1. And remember to cut off everything's tail if it has one.
