So, humanity has two forms, hard (item in your inventory) and soft (number in the upper corner). You can use the soft to become human or to kindle a bonfire, but it uses that number up. When it is 00, that is when it says "No humanity" when you try to go human. So use a humanity, then try to go human. See if that works.
For sake of clarity, I won't refer to either as humanity, but:
1. the item (consumable in your inventory)
2. the stat (large number to the left of your health/stamina bar)
You consume the item to increase your stat. You will notice that it drops to 00 if you die. In order to revert back to human form you have to have the stat be greater than one. That means you need to consume the item in order to gain at least one stat point. After you have at least one stat point, you can use a bonfire to select the option to un-hollow yourself.
