So is playing offline not enough to avoid a ban with mods?
First off, I don't care that I got banned, I never really summon or pvp anyway and from my understanding the online component of this game is long dead. I knew the risks when I started downloading and installing the mods, I just don't like the idea of being labeled a cheater despite never using mods to my advantage against other people

So yeah, I've already played through countless runs over hundreds of hours in the PTDE and the remaster. Regular challenge runs are getting somewhat boring so I recently started trying out some mods, mainly an enemy/item randomizer and the ascension mod. I make sure to play the game in offline mode by logging out from the main menu every time. Is there something else you're supposed to be doing? Since apparently you can still get a ban for it

That's the problem right there, you shouldn't have logged in in the first place. Your "invalid data" was sent to the servers regardless of you logging off afterwards.

The game has an offline setting in the menu to prevent it from ever logging in. That's what you're supposed to use, so it won't even attempt to communicate.

It'll ban if you didn't remove the characters you played them with.

Ah thanks, that explains it. Bit too late now, but maybe it'll help somebody else one day. Also it seems that after removing modded characters/data you do eventually get unbanned, so it might help me if any interesting mods come out in the future.
