After I finish ng+ 7 in ds3 I plan on doing the same in DSR I wanna start as a pyromancer what stats should I focus on ?

You do not need stats to use pyro, except for attunement. So bring your attunement a bit up, so you can use more spells.
Beside that you are free to use whatever you want. But you have to spend a lot of souls on the pyro glove and the spells, so you do not have that much of levels in most of the first playthrough.
Keep in mind having a normal weapon, because you are not able to kill everything with pyro.

aye, quelaag for example is 100% immune to fire damage, so any straight forward damage pyromancy is useless... flash sweat however is very useful still.

otherwise... for the most part 4-6 attunement slots should be enough, after that stack for however much vitality you think you might need, then largely focus on dexterity based weapons, since you can get faster cast speed with your pyromancy as well if you get it up to 45.

Pyro is extremly expensive, so better open the forest door to farm those phantoms if you want to rush the pyroflame. Other than that ..as long as it isn't immune it dies in seconds... if it's immune enter the DLC (if possible) and get dark combustion (dark flame?) and continue your killing spree.

Fair warning: it's op. Completly broken - especially if you are used to melee and go for great combustion / dark flame

45 dex increases casting speed a lot

Yeah, between 35 and 45 dexterity, your casting speed increases. So basically, for a pyromancer, make it a DEX build with extra attunement.
