Your +5 Black Knight GS is fully upgraded, you can't give it other enchantments. Also, consider that you can't buff that Black Knight weapon, so when you go up against an enemy that you know is weak to certain enchantments, it's nice to have a second, uninfused, weapon available.
Are you fat rolling? If so, reconsider your gear. A full set of Havels might seem nice, but I would personally prefer to roll to avoid damage as opposed to using a shield. The grass crest is good for stamina regen, but a silver knight shield would be my preference for mitigating damage.
I use the same rings you are using.
Next time you level up, consider putting points in faith/int for some spells or miracles. You may just need to invest a few points in faith or intelligence just to be able to get some extra damage with magic weapon or flame weapon. There are a few nice utilities that are good to have on hand - Fall Control, Power Within (boss destroyer), Cast Light, are nice to have around even if you're not a primary caster.
