125 in DS1 makes sense because most builds are usable without being too OP (aside from CB) and also letting you have enough health to not die in 1 backstab. 135 makes other builds work better against CB, but also kinda isn't limited enough in random PvP.
People will always try to push past the meta level, so misconceptions are expected. However it's understandable with DS2 and adaptability, though you can be OP in the arena at 125 if you have the right build.
Haven't done Bloodborne PvP either, but I hear it's 125, but I'm also seeing SL 100 builds (haven't looked into it much anyway).
I loved SL80 bracket best, because my poison+bleed build was actually usable, and because the HP to damage ratio was better (more HP, less damage compared to SL125). Sadly there were builds that were impossible to do at SL80, like mage and stuff. I had a pyro and a sorceress at SL125, loved playing them as well, but the balance felt off compared to SL80.
EDIT: In DS1 there is the twink bracket as well, so yeah.
The meta later on dropped to 80 in DarkSouls 1.
I'm doing my characters at 80 for this game. I think it's a good level imo
sl125 is most common because almost every build is viable at that level, allowing people to make builds without being too overpowered by being too high a sl with too many stats.
Dark Souls 2 sl 150/sm 1.700.000
Dark Souls 3 sl 120
