You're not going to be able to wear a whole set of heavy armor and fast roll without some serious min/maxing.
That's a funny way to talk about functional player poise.
I mostly a joke. I love DS1 and DS3 about the same at any given time.

Basically everyone wants at least 40 endurance, and that already gives you plenty of room to wear some heavy gear.
Try to use Havel's Ring if you want to go further and then put points in VIT, before you decide to go further in END.
Splitting stamina and equip load didn't really do much to the meta beyond make the sequel COINCIDENTALLY have a higher "community cap"
What's that? You need an extra 30 levels or so to get roughly the same end result as in DS1?
Oh look, the endgame PvP meta for DS2 is roughly 30 levels higher, what a coincidence good job splitting those stats. So mostly the impact was on people just wanting to screw around in PvE or Co-op, in the end.
Let's just pertend Dark Wood Grain Ring didn't exist before patch 1.06.
