Answer is obvious, it's DKS1.
Early generic DS3 normal enemies likea Borean Outrider Knights have more complex movesets and are more aggressive than even bosses like Artorias in DS1. Enemies are crazy in 3 and boss fights are complex multi-phase encounters, and the game is much harder to break since they nerfed everything to the ground (except straight swords lol) plus the fact that it's much more linear so you can't sequence break for early OP equipment. DS1 is seriously much easier than 3, I can say this with 100% confidence.
But as for your question it depends on what you mean by fun. DS1 SL1 unrestricted is too easy, Pyro is OP, but melee only is another story.
I suggest trying some variant of the ENB Class Challenge in DS1, except maybe don't follow the no estus rule as that's a bit dumb.
Basically:
-Pick a starting class, you can then only use the equipment that class starts with. You cannot equip anything else, aside from rings. Rings are allowed.
-You cannot level
-No Estus (Cleric's starting Healing spell is allowed) - Alternatively, scrap this rule like I did and just go with No Kindling instead, much more balanced since otherwise Cleric is OP and without Estus the game becomes more of a chore.
-You can only use Andre and Rickert as your blacksmiths. This means no elemental fusions.
-The Pyromancy Flame cannot be upgraded, assuming you pick Pyromancer.
-No summoning players or NPCs
-No covenants
Then your starting class REALLY matters lol

PvP = DS2 or DS3. The netcode in DS2 was more suited for PvP I've heard, and DS3 tends to have better connections compared to DS1.

WRONG! Ds2 had the worst pvp systhem in my oppinion, bc the parameter they messured was not the sl, but the souls you have earned, so if you do sl1 you get matched with sl 120 after one or 2 playthroughts
