NO BOSS SOULS
So I just noticed after killing Capra that I didn't get a boss soul from him, afterwards I killed the Gargoyles and same. No boss soul from them either. I asked a friend and he happened to notice that he hasn't got any early boss souls neither. So now I want to know, is this a bug or intended? If so, why? And has anyone else the same experience, or maybe all?

Welcome to DS1, most bosses don't have boss souls.

I've noticed in the Remaster that some bosses give me souls and others not - it's been a little while since I have replayed thru Dark Souls 1, but I'm certain ALL bosses and enemies give souls (just like the other games). So this appears to be a bug in some peoples games.

Now if you're talking about the actual Boss Soul items - then yeah as others said, only a handful of the more out of the way bosses drop to them in this first game (such as the Moonlight Butterfly, Chaos Witch Quelaag and Sif I believe).

I've played EVERY Souls game, and started playing them back when Demon's Souls first came out in the US in 2009. I was a fan of King's Field on PS1 and had been folllowing its development in famitsu for two years.

I had already beaten Dark Souls on BOTH PS3 and Xbox 360 the first year it released, which if you recall the game had been out well over a year before the mainstream discovered it and 90% of the people who would play it ever even noticed it's existence.

I've replayed through the original Dark Souls alone 9x times in the better part of the last decade.

Definitely not a ds3 casual. I even have a entire youtube channel dedicated the Souls and Bloodborne pro plays.

Quelaag (Quelaag's Furysword and Chaos Weapon)
Moonlight Butterfly (Butterfly Horn Catalyst and Magic Ring Shield)
Iron golem (Golem's Axe)
O&S (Greathammer and Dragonslayer's Spear, depending on which you receive)
Priscilla (Lifehunt Scythe, also drops Priscilla's Dagger from tail cut)
Darksun Gwyndolin (Darmoon Catalyst and Darkmoon Bow)
Sif (Greatsword of Artorias (both a cursed and non cursed option) and Greatshield of Artorias)
Sanctuary Guardian (useless soul; cannot be used to make a weapon)
Artorias (Abyss Greatsword)
Manus (Manus' Catalyst or Pursuers dark magic)
Gwyn (Great Lightning Spear miracle or Gwyn's Greatsword)

These are all the bosses that produce a soul upon defeat. Other bosses have tails that can be cut, which contain special weapons.
