So pretty much, you're going to have to go to NG+ to get it, because nobody should kill Solaire.
Otherwise, I think you'll run into him next in Anor Londo. Then at the sunlight alter later.

Kinda sucks, but hey, it's a game where both actions and inaction has consequences. The white soapstone being missable is a little annoying, but missing Solaire is pretty rare I gotta say, and being able to miss stuff at all is kinda rare in games. Not just nowadays, but in general.
So, make sure you explore more thouroughly in future, don't expect to get everything in a single playthrough, and forgive the soapstone being so easy to miss, as co-oping specifically with friends in an organized manner was not intented in the original version of the game and the Password system from DS3 was just kind of shoved in after the fact in the remake.
The Soapstone being missable was absolutely not a big deal when being able to co-op with specific people wasn't an option. Moving the item/Solaire would just bother people for changing the game.
Oh and I suffered with DSCM and trying to co-op with a friend in the original, believe me... I didn't even know missing the soapstone was possible either. I guess we'll find out if Solaire must die.
