I tried reinstalling, still doen't work
My admin user account on windows is "Zoé". There is a "special" character : é
DS Reastered is supposed to create DarkSoulsKeys.ini in the settings folder C:\Users\"Username"\AppData\Local\FromSoftware\NBGI\DarkSouls but it doesn't if I'm using this account.
I tried to launch the game with another account (without any special character) and every thing was fine. DarkSoulsKeys.ini was there and keybindings were saved.
So do you have any special character in your windows user account?
Thanks for the input, I also have this problem, and I also have an accent in my username folder, so that might be it. I tried to download a "DarkSoulsKeys.ini" from a friend and place it directly, but it doesn't fix the issue, and I'm too lazy to create another account, reinstall everything etc.. so I'll have to wait for the patch, but thanks for pointing that !
Hopefully a fix is coming soon.

Mind you this won't change your Windows username so Windows will sill treat you with all the weird-ass characters in the world. It is just your user folder that has the different name. I would say this is the best solution anyway since Dark souls remastered is not the only game/software that has difficulties with non-Latin characters so this can save you from similar future headaches.
As for this game specifically this is by far the easiest solution as I did too many hours of research on the matter and it does not seem that you can change the location Dark souls remastered fetches its configs easily. In the files there does not seem to be any reference whatsoever to the %AppData% directory so chances are it is coded in the .exe file. I tried viewing the .exe code with DotPeek and Ghidra, but could not make a lot of sense of it. (Though I am not programmer)
So if you don't fancy reverse engineering the Dark souls remastered's code I would say settle with the above suggested solution.
