If you're going dexterity, then it is one of the best options, but I like to get it early, turn it into a fire weapon because it just destroys the majority of bosses in the game as fire is a major weakness of many in DS1. There's videos on Youtube that will help you speed run through this area to get what you need if you haven't touched it.
If you're going strength, then Black Knight weapons are so powerful and will get you through a good chunk of the game too. You can get them really early and just flatten anything in your way. However, you can only upgrade them to +5 and you need twinkling titanite to do so.
Generally people look down on split damage and +5 weapons though, or at least that's what I've seen over the years. Those are just two easy early weapons that I think are awesome if you're looking for a laid back PvE experience.
You can have more than one main weapon too. Don't be afraid to experiment. A personal favorite weapon of mine is the standard path Murakumo for both PvE and PvP. Who knows, maybe you'll find one that isn't necessarily considered "the best," but that you really love wielding.
A safe bet is going the standard path with the Claymore or Zweihander like others have probably mentioned. You get these two weapons without going out of your way and you get the Large Ember early on in the Depths through a standard walkthrough for +10, and +15 when you get the Very Large Ember from the New Londo Ruins shortly after that. Another bonus of the standard path is you can get to +10 so fast.
Can't say I like occult weapons at all and the only reason I go divine is for the Catacombs. After that, I don't touch it. Raw weapons just aren't the best option to go with either and when dealing with ghosts it is better to just use transient curses. Save your souls and materials. I agree with the first poster on farming locations, but I'd also add for green titanite a good place to farm is the giant leeches in the Blighttown swamp.
You might want to just farm enough for the stuff you need now and then, once you get access to sen's fortress, get the golden serpent ring (to boost item drops) and come back to farm the rest.
Your drop rate will improve a lot especially if you need to farm large quantities. And you find some large titanites in the fortress too
Just don't kill the boss there yet to go to anor londo
Not only will the BK's potentially drop their loot, but the lizards will drop more & better mats with higher item discover. You can always come back for lizards when you're ready.

Oh I see. So it is possible to just go to the top of the Great Hollow, drop to the Balcony area where there is a tunnel that ends in a platform that spawns 4-5 lizards in total I think? Can I just go there and Quit and reload until I farm a decent ammount of Twinling maybe a Slab or two and after I get the serpent ring I come back? Can that work? Since the One lizard in the tower of the Undead Burg either didnt respawn around the barrels or just stopped alltogether.

Huh...I could've sworm I killed the Burg lizard at least twice. Oh well, the clams in ash lake seem to drop Twinklies too and those probably respawn like the ones in the Archive.
Plus the comment on the wiki seems to have a pretty good strategy. Reload the game after 3-4 hunts for items so they basically reset.
The ones in the great hollow are just handy if you want to upgrade your weapon early. Your could just farm enough to get the twinkling titanite you need to get too +5. So you get 2 from the burg and 2 from the one in grassroot basin or something so you only need to kill 3 in the great hollow before getting the serpent ring
Killing the lizards is also a bit easier than the clams :)
But the lizards are indeed unique and don't respawn.

Black Knight weapons are very good with base stats and good with scaling.
a Black Knight weapon at lvl 0 is about the same or even stronger than normal weapons at lvl 5(from what I could check).

Giant's Halberd with magic also seen quite nice on some situations.
Smough's Hammer is a bit better than Dragon Tooth on damage but . . . that thing cover your screen, you cant see s**t in front of you making it more difficult.
Also these "big guns" have a downside to them, like Zwei, these leave you self-staggered for a time frame after you attack, leaving you open for attacks if the enemy is not staggered or if you miss the attack.
Light weapons like Scythe or Black Knight Sword dont deal as much damage/hit but the attack animation dont leave you self-staggered.
Both Halberd and Greataxe have a very small self-stagger that I noticed but much more manageable than the Zweihander (Great Sword), Great Hammers and Grea Axes
(*but as I mentioned, for some reason the Black Knight Greataxe dont have such a big impact on self-staggering and it is when attacking with light attack two handed, what is a good thing on this weapon that is indeed quite strong).
The "bigger the gun", the greater will be the down side at some point (attack animation, self-stagger, range . . . ).
This game is not just about "take a big weapon and be happy".
Just consider this . . I have a +15 Great Scythe at NG+, it deals like 50 to 75 damage to Artorias, but I hit a lot and it is rare to get hit (yeah, I dont have that much DEX too and the base damage is low, but weapons is fun).
Going with low HP and ring, it can deal like 120 to 150 damage/hit but . . yeah, 1 mistake you are out.
Great Axe I deal like some 250 to 300 damage, but sometimes Artorias hit me with his dirt throw to my face (what sometimes render me staggered).
Smough Hammer . . when it hit, IT HITS, about some 350 to 400 damage, maybe 450, I dont remember . . . but chances are I also get hit back and I cant see anything in front of me because the weapon cover on screen anything in close to average range.
Smough Hammer is fun to use and have its uses, if you go with Giants armor +5, Havel Shield and is not considering dodging, it will be a good and fun choice. Work against big bosses that dont move much (or that dont move at all).
Greataxe and Halberd have better attack animations to deal with things, being more versatile (also considering you can be invade too) and much lighter (allowing for better armor or for a shield).
Not only for the movement and attack pattern, but staying under 30% weight% give some advantage over staying just under 50% weight% and so the weapon weight makes a huge difference.
Normal weapons you can set pines to make therse temporary stronger, other thing you can do is lvl it up to have already the infusion . . . or there are weapons where the base damage + scaling already make these into strong weapons (boss weapons and black knight weapons).
I may be wrong about how I play the game, but it is just what I couild check from a first playthrough at NG, a playthrough at NG+ and 2 other playthroughs at NG.
What weapons you gonna upgrade and what weapons you gonna use depend on your taste, fun and strategy for the situations.
wait but the dragon crest shield doesnt use dragon scales. only dragon WEAPONS (tail cuts from dragons) use the scales.
