I got up to 800 on my current city but I don't have as much land as i'd really like

Mind sharing a screenshot of your city layout to have an idea how to get that much pop? I'm trying to put all the homes around the border of the map and I'm at 3K, but 5K? that's some amazing planning right there.

...and i'm not sure i want to bother trying to get 5K pop for the achievement.

The coastal tiles are for the most part, the most fetile land. I would think there would be the best to put farms. Build walls on piers to contain them. Manor houses I would think should be more central, clustered around utility buildings like churches, libraries and markets. But I am a rank novice at this game.

orchards are a good bet for food but need 4 tiles of fertile soil. Better cover a bunch of fertile tiles with farms and barren ones with windmills, sotrage & wells to put out fires. I managed to have 2K food production with less soil than in my previous game (thanks terkala for the tip). Windmills do boost food production like crazy.

Make sure you have storage near the fields, as otherwise you'll loose tons of food.

you must have cheated sir... whenever i place a farm not on a road it ALWAYS says *needs road access* etc... CHEATER!!! QQ

Just got to 5k to get the last achievement. It's a PITA how you have to make something not really sustainable to get there. Had to remove so many useful buildings to put manors in their spot.

Easy. Build the rd then the farm then delete the rd. I do this all the time - it's a stupid rule as they clearly don't need roads.

pretty much. Same with all the other buildings. Even when there are roads, they won't use them, so yeah...

6,000 + population is possible, with good economy and defense. I posted a screenshot. call city of gods.

Got a city with 6000 beds and a stable population of +-5500. They all have roads & charcoal. Got a few pictures public.
