How hard it is depends on how fast you can burst down the Long Bird Egg. Taking it out shuts down two of his most devastating abilities: the facility wide Pale attack, and much more importantly, the pause blocker. Once you can pause, the fight becomes much, much easier to handle.
So since the Long Egg absorbs Pale but takes damage from everything else, what I'd recommend is getting everyone but your Pale employees into a big deathball and charging the egg as soon as possible, with your Pale employees sticking around to keep the really nasty things melting down from getting out of their boxes.
Once you can pause again, Apocalypse Bird isn't too bad.
"facility wide PALE damage" is increadibly overhyped, i for the longest time, thought the scales weren't doing anything at all; the damage is very minimal.
the entire fight shouldn't take more than 5-10 minutes. birb may be difficult if you don't have gebura supressed or you greatly lack employees, but i never found apoc birb difficult
Upon reflection, the hypnotism effect wasn't as bad as I thought. The big issue is that I should have divided my agents by damage type which would have made taking out the eggs that much easier - possibly. I think we brought Small Beak down to 2/3 hp - can't say much about the others. Although I've gotta say, the constant teleporting is surprisingly annoying.
That, and being unable to ESC to menu is obnoxious. I understand not wanting me to use the pause button, but if the door rings mid fight I'm screwed.
Much like not having any damage-sorted kill teams, I wasn't really aiming for anything. What made things tricky is I did have a kill team handy... that was a mix of pale, red and black damage which obviously was a terrible idea. Plan B I'm going to be sorting departments by damage type. I've got a few employees that I'm about to max out, so I might just grind out for one more cycle and then try to trigger it.
Good news is the only clerk's rights activist I have in base is Big Bird so no fear there. Bad news is that Green Dusk triggered during the fight, so that was an extra can of worms to deal with.
We had a few close calls when CENSORED and NOTHING THERE nearly broke out (and Cry of the Moon did), but after dividing the departments into damage-sorted kill teams, everything went down with 0 casualties.
Although I gotta say, it kept lagging my game like you wouldn't believe.

As for the lag, I have a personal theory about that. I've beaten Apoc Bird twice deathless before, on consecutive days (once on the day I was doing the WAW suppressions mission and Punishing accidentally broke out at the same time I was forcing Judgement to breach for the mission and then the next day to use the eggs for the 3 ALEPH suppressions) and while I got the same MASSIVE performance dip after the first kill, I didn't after the second. My theory is that the performance hit has something to do with the game giving everyone the Apoc Bird gift all at once, which would explain why it didn't happen the second time around.
The game started lagging for me after I broke long bird's egg. I bring up the lag specifically because breaking big bird's and punishing bird's egg was like watching a powerpoint.
