Yesod is only visual effects, could cause problems with really low end computers or if you really need the UI, but other then that no changes.
Hod is a troublesome one, but provides the best upgrade when completed, which is the ability to hire an employee with level 3 in all stats for free, essentially cutting all farming in halve. This one requires you to go into the boss fight and try to complete it. Depending on the attempt and the reason for failure, you can gauge what needs to be improved.
None of them are relatively hard, as this is just the first layer core suppressions, but this is not saying they are a walk in the park either, as evident by the requirement of completing a Dusk Ordeal (2nd strongest Ordeal).

Yesod is basically just a memory game. So long as you remember what you need to do on each abnormality you should be fine. It gets extremely difficult to see what is going on, so don't do anything that relies heavily on sight like micromanaging combat.
Netzach prevents all forms of healing and only heals you during each meltdown, so avoid fighting or sending the same employee to work repeatedly as they can't be healed in a room. Basically just keep an eye on everyone and you should be right.
I forget what Hod does, so unfortunately someone else is gonna have to tell you what she does.
Personally I found the best strat is to try to hit your energy quota as early as possible before it becomes too tough to manage the stat decreases since early on the stat decreases are minimal.
Also play EXTRA cautious around the ordeals. You have no idea how much having -50 in a stat hurts until you do HOD surpression.
Its -35 in the base game, Kaizo Corp is -50 (Its actually -55 and it use to be -75). This doesn't change anything as the strategy to beat it stays the same (unless its over 50). That being you push the meltdowns while using your "basically immortal" employees to deal with Ordeals
Also, I presume by "basically immortal" you mean "bullet spam"?
Is there a reason besides corpse-eating abnormalities (Smiling Bodies) I shouldn't fill my departments?
One reason is Levelling
Sending employees to do work gives them XP in the respective stat (Ex. Instinct = Fortitude)
Having more employees means over the course of they day your XP will get spread out a bit more thin, but that may or may not be a major concern, especially once you beat HOD Surpression.
There are also abnormalities that react to levels, such as CENSORED, and having a lot of low level employees CAN be detrimental.
Finally, low level employees tend to snap or die fast. When employees die, other employees in the room take sanity damage. Basically, having a bunch of weak people in the room can allow your room to get instakilled just because a couple weaker employees failed.
