How difficult is it to a beginner?
So I'll get to the point: I'm stupid as hell and am usually not good at these games, but the design of Lobotomy Corp looks super interesting to me

I've just started playing yesterday. All my employees actually died on Day 3 because I didn't understand how the new Abnormality worked. The point is that you can reset your day or go to memory repository. The memory repository is the rogue-lite mechanic, meaning you get set back a couple of days BUT you keep any information you have on Abnormalities. So you can brute-force your way through the game but throwing as many employees as possible at the Abnormality, find out a couple of things and reset.
The game isn't very intuitive at first, so I recommend playing through the tutorial and a couple of days, and afterwards reading a spoiler-free guide. Don't try to google what an Abnormality does immediately, the most fun is had by totally not knowing why something happens and finding it out step-by-step :)

I'm not going to lie, this game is extremely challenging and has no difficulty setting. It's a game where you are meant to fail, reset and try again. You will keep certain perks after a run through or after certain game events that make subsequent runs easier but at the beginning you need to focus on how to work with the abnormalities to prevent breaches and keep your employees alive. They will die often until you figure out what you're supposed to be doing but that's all part of the game.

It can go both ways. As you progress the game, you unlock stuff that you can carry over when you start again; something that will definitely happen no matter what you do.

Some abnormalities (the entities you work with) have quirks that you have to keep in mind: like not sending someone to work with 'x' stat under 'y' level, or taking too long, or not sending the same person twice in a row otherwise the abnormality kills them.

All of these notes are unlocked in-game (and can be reviewed at any point) as you work with abnormalities, so it's not like you strictly have to memorize them.
