Both versions have problems on windows 8 and 10, I have GOG versions of Sierra games and I have to play them in XP compatibility, because they crash constantly on my system.
Look at support pages, people have trouble running them too. In other words, you point is not valid.
So your saying GOG was given the source code to monkey with and make it more compatible than the Steam version?
This. I haven't noticed any difference between the Steam or GOG versions on Windows 10 but my old Pharaoh CD used to crash between missions sometimes!
There are few games that have an actually different, "better", version on GoG, e.g. Earth 2140, but in most of such cases it's due to different publishers and not GoG itself.
Also, there are cases when it happened the other way, too. For instance until quite recently the Russian version of Etherlords on GoG was a joke, as it was a very incompetent translation from English, which in turn was a translation from... Russian. In the meantime, the Steam version had the original script and an active community manager on the forum.
In short, it all depends on the game. Thanks to the refund policy that these both marketplaces provide nowadays, you might as well just go for the lowest price and refund+purchase from the other seller if you run into any problems getting the game to work, as long as you are not concerned about DRM or bonus material that GoG sometimes provides.
