Do I take it to get appraised or do I need to put points into a skill?

Spirit's Touch is used for identifying items... either with a scroll or by Auspex discipline. While the scrolls themselves can be found frequently just by questing, Serena already has the discipline and Christof comes by it later after defeating Ardan.

I noticed I have some items only for humans, do I get human characters later on?

also what is an FAL it looks like an idol statue and it's only for humans

Unless you're playing with a mod or multiplayer, then no... after Christof is embraced, the coterie you team up with are your allies. If you're playing through the single player storyline, sell human-only items as you'll need money to upgrade your gear, buy blood packs/vitae, etc.
