If you mean de-linking your PSN and Steam Accounts - in my experience : Yes, you can play afterwards..
My proof is that im still able to play.
And/But I also didnt use/ask PSN Support to delink Steam from PSN (If that would make any difference).

My PSN-Account is still active (as I had it before for my PS4), so - I dont know if anything changes if you actually DELETE your PSN account.

BUT - To be fair I also heard that ppl are no longer able to play..[snip]
