You need to use Radeon Chill or something else to cap the framerate down to 30, also reducing resolution from Windows can help too. These should get you into the game long enough that you can reduce the settings. Just disable AA, Ambient Occlusion & Screen Space Global Illumination and set the resolution scale to lower than native.
Then exit the game again and set the framerate cap to 60, and restart.
In AMD adrenaline reduce your max frequency to 85% and power limit to -1%.
In game settings turn off global illumination and anti-aliasing, resultion set to native and a max FPS limit of roughly 60-100. Other than that leave settings untouched from the "high" preset.
It still occasionally hangs but it's hours apart. when it does hang it tends to be a hard system hang that causes a reboot, and Adrenaline resets the GPU defaults and you'll have to redo it. If not the repeated crashes will return.
This is what i'm doing with my 7900 XTX that has worked so far running on a 2K resolution.
I had the same driver timeouts even on older AMD drivers.
I finally solved my timeout crashes by deleting the shader cache file of the game and adding a Steam launch command to make it use DX11. I also limited the max frequency of my GPU to 2400MHz, and disabled SSGI, Ambient Occlusion and AA in-game. And capped the framerate to 60 with Radeon Chill. In-game framerate limiter adds about 10 Celsius degrees to the CPU so I stopped using that one.
This lets me run the game at ultra quality resolution scaling from 4k, with most of the other graphic settings at medium or higher.

Its not waterproof, but I went from a crash every 5mins to...longer.
Just make sure you are running with the latest updates and run the game in DX11.
Game looks fine on low settings, not as sparkly but still great, and its most likely an issue that can and will be sorted out either my AMD or the game devs in short order... So come have some fun, and every few patches crank ♥♥♥♥ back to high and see if it's stable yet.
