When the tentacles come up, it takes a second or two for them to attack. If you run under and past them immediately you can dodge them very effectively until you get enough distance the tentacles no longer spawn from the enemy, or you deal with them.
Though I feel like you're really putting most of the harm on yourself by soloing the second hardest difficulty level in the game against enemies you don't even know how to fight yet. Maybe turn down the difficulty or play with others until you get used to it. You're doing what is effectively a challenge run and then complaining that it's "unplayable," that's not really the fault of the game.
It's like they're making a vietnam game except they are making the US faction slowly get more and more under-equipped per patch.
