They spawn around terminid-infested areas, mainly around certain bug nests. They do some damage and inflict Acid, slowing you down.
On red-moss planets like Crimsica, there's big ol' mounds of puffball mushrooms that emit a (mostly cosmetic) smoke cloud when stepped on, but you can shoot them mid-dive to chuck yourself across the map, at the cost of needing a stim afterwards and a slight chance of instant death.
On frigid planets like Vandalon, there's glowing blue plants that you can touch or shoot to stun everything around it and slow yourself, basically acting like a mini ems strike
There's actually a lot more environmental stuff than some people realize. Bots in particular have turrets that you can man and use against them, you can shoot the occasional dud hellbomb to wipe stuff from the face of the planet, there's even explosive barrels that you can lug around, not to mention the whole destructive force mechanic and the choice between culling buildings and fences to give a better line of sight or leaving them be to block off bot fire / funnel in bugs. There should really be a Brasch Tactics about this kind of thing.
