Weird. I do exactly that all the time.
That is actually true but you need something with strong stagger like the Punisher not to mention shooting the head doesn't count, you have to hit it in the mouth.
What i hate about them is they are way too tanky for what they are, their inflated belly should be considered a weakspot imo, also the spit attack is weird because there are time they close in after they spit and another time they walk two steps and start spitting again.
It feels like it's harder than it should be to hit their head weakpoint. It's already a small target, usually obscured by terrain until they're about to spew on you. Especially annoying when they're in mortar mode where they practically have their heads buried in the sand.
It's weird, because I can nail the heavily armored warrior bugs in the head without issue, even when they're hunkered down which lowers their head hitbox even more. But half the time I hit a bile spewer in the head, I don't actually hit the weakspot.

I think a sort of damage inconsistency is part of the Helldiver 2 core game design. you can hit a titan in the face with 4 disposable rockets and it wont die but sometimes one will die from 1 rocket, which is fine but the inconsistency rating for interrupting a bile spewer is roughly 8 failures to 1 success
Impact grenades can take them down in one as long as you hit it.
Maybe a latency issue with your client? In the beginning I used to get capped by them all the time but just grew used to them now. The trick is to instantly change your direction the moment they throw their head back up spew. Very manageable.
This also helps.
Also, you're probably dying to desync.
