you can actually see that when you shoot them the hitmarker is double: first grey with the bounce icon and then red.
demolisher explosion is much smaller and is also, i think, directed (not circular like plasma's).
also demolisher shots will not bounce if you hit the crotch of the strider, not the cabin.
Also, correction on the UI. A red X means you are doing full damage. This is hitting an armor grade below your weapon's penetration capability (e.g. Liberator hitting unarmored, or a Slugger hitting light armor). A white X means you are penetrating, but doing less damage. This averages out to about a 40% damage reduction, or in other words your weapon is dealing just 60% of it's potential damage. This would be hitting a Brood Commander's head with the Liberator, where you are doing about 33 damage per hit instead of 55. Seeing a shot visible deflect, or seeing the shield icon next to your crosshairs means just that; your shots are deflecting and causing no damage. You'll see this when using light armor penetration weapons against medium armor (Devastator bodies, Hive Guardian front armor), or medium penetration weapons against heavy armor (Chargers, Bile Titans, Hulks, Annihilator Tanks).
Explosive damage =/= Having an AOE (area of effect)
For Example: the Liberator Concussive does deal explosive damage, but lacks an AOE. So it benefits from the Nursery Spewer's and Bile Spewer's 500% weakness to explosive damage, but cannot kill a Scout Walker pilot by shooting the front of the walker.
The damage i think is classed as explosive so it does 100% damage vs things like the leg of a charger when the armor is gone.
The scorcher isn't penatrating the strider armor (nor is it actually penatrating tank armor). The scorcer does explosive damage. So the AOE explosion is reaching the bot behind the strider heavy armor plate. And its reaching the weak point vent of the tank when you shoot near it. That's how its killing those things.
