Because they have only a handful of buttons on those little plastic controllers, they have to sacrifice the ability to shoot or dodge to set a push to talk.

Playstation mic are in the controller now, and is basically always on. There's no way (At least in the few games I have) to do any push to talk. You can hook a headset up, but basically have the same problem, if you don't have an actual button on the side or on the cable youre basically open mic all the time.
Also, as per the comment above this one, Yeah sony made it a giant pain in the ass to do basically everything on the PS5. I had to download software to watch movies ffs. Turning it off is going through 3 menus now, you used to just be able to hold the PS button. I hate the damn thing. It was an impulse buy because they had never come to my town for 2 years until 3 came to our walmart and it was the last one and I was like, ♥♥♥♥, better get it before I never see it again.
