As he mentioned, parrying with the shield. You may be confusing that with blocking, but they are very different. Don't think the game ever tells you about parry, it just expects you to accidentally do it at some point to find out it exists. To be fair, it isn't needed for anything, and it is very hard to pull off correctly, but apparently quite powerful if you can do it.
I recall that the manual does indeed tell you how to parry. Well.... lol. I mean, the manual never tells you much DIRECTLY but instead hints at a lot of things indirectly. Done in a way that you can figure the entire game out on your own though. Yes, this means figuring out the entire game without looking up anything online. That was a huge part of this game. Figuring out the manual and all the secrets in this game.
Anyway. I didn't use the parry that much for most of the game because the timing to use it is so bad that the vast majority of the time when i tried using it, it always backfired and I took all kinds of damage trying to mess with it. So I eventually said, "nope" to the parry.
This large shield guy is the one exception where I actually used it on him. It's meant to be used to get passed him. Later in the game of course as you get more powerful and get a certain item that makes dealing with him easy. There are only a few of these large shield dudes in the entire game, so you don't even have to deal with him that often.
To answer the original poster of this thread directly: the answer to your question is you use the parry on him. Guy with a large shield> you with a shield that you can parry with. Another example of subtle hints in this game when it comes to game design. He is placed on thin bridge also hinting at that you really aren't meant to pass this area yet unless you can deal with killing him. You actually aren't meant to go to this area until later in the game anyway. So don't worry about it. You will get an item that can bypass the shield parry entirely and killing him becomes easy because this said item can deal with his large shield.

Weird. I could have sworn that the game tells you how to parry in the manual somewhere. I could have sworn that the game does hint at how to parry, if not in the manual, maybe at some other point. I can't remember. I'm pretty sure the game does tell you how to parry. Even that or maybe it doesn't, but I figured it out on accident? Unfortunately I don't remember.
If you would like to know how to parry all you have to do is tap the shield button really quick (R2)
To be honest the parry mechanic in this game is pretty ♥♥♥♥ because the wind up is too long so the timing is not worth the hassle most of the time. Except for this long shield guy. It's not as bad to use the parry on this enemy and if you notice this shield guy will actually flash right before he is going to attack. Almost like this guy is set up for you to try and parry against his shield ......
