Is a stick only run possible?
The boss in the garden is immune to the stick, and I can't find an alternate path to ring the west bell.

IDK but do you mean stick as the _only_ weapon at all, or just not using a sword? Those are different questions.

I'll assume you're literally asking about stick only, it sounds like the answer to that is no. In theory if you use other non-sword items and enough berries (which you can grind money for with the stick) you might be able to complete things?

I was able to use the fire-sword accessory in place of a sword for plants. I wonder if that might help with bosses usually immune to stick.

Though, now that I think about it, the turrets were immune to even that, so it might be immunity to stick - whether fire enhanced or not.

At the very least you can get midway through the game, as there is an achievement for getting the gun in the quarry. Worst case scenario you can farm enemies to buy dynamite and use that.

What about Chilis? Does the spicy boost allow the stick to work?

This guy is dong a stick/cards only run. https://www.youtube.com/watch?v=qJjxBc0RzAY
He winds up using the grabber on the blue key boss.

So far I've managed to clear everything up to the bosses without the sword. And I beat the garden boss with lots of bombs.

The turrets are actually immune to fire (might be immune to stick as well, haven't tested that), and the fire-sword card doesn't add fire DoT to your sword, it changes its damage type to fire, which gives it the DoT.
I'm currently doing a challenge in which I keep the fire-sword card equipped from the moment I get it to the end of the game, and having serious issues with one of the key bosses, because it is also immune to fire.

All of the bosses up to Heir I are technically clearable without the sword. Certainly not easy without invincibility, mind, but none of them explicitly require it.

I have run into the issue, however, that I seem to have broken my Tuning Forks of Awakening - neither stick nor sword nor gun seems to work on them. Suppose that's what I get for trying to get them after getting the HexForce.

EDIT: Turns out the Broken Flame Sword card prevents the use of the Tuning Forks as well. Stick works just fine on them when the card is removed.

If you're allowed to parry with the shield in your run you can damage stick-immune bosses by parrying their ranged attacks. I know that's the case for at least the Siege Engine and the Garden Knight, not so sure about other bosses.
