Get the dog companion at Ray Ray's and he will mark animals and enemies for you. Makes it so much easier! Hunting animals looting the skins and meat then sell skins.

Hunting is hands down the best way besides from side missions. Even after a few minutes of hunting you can earn a lot. You can also fish. While i dislike the fishing mini game, fish are definitely easier to find.

This may be the best spot on the map for quick hunting cash. Franks Cabin.

This location has a ton of different animals. Hares, Alpha Hares, Bears, Deer, Alpha Deer, Eagles, Prong Horns, Skunks, Alpha Skunks, and boars if you head just north up the mountain from the cabin. Use the bow with the hunter's mark potion and you'll have your limit in no time.
