I would advise having a look at EAC support portal here:

Add -eac_launcher to "game launch arguments" under Far Cry 5 in UPlay. This should allow you to launch Far Cry 5 with EAC disabled(no multiplayer access btw).

Once you add that in game launch arguments, how do you know EAC is truly disabled? I was unable to access UPlay Store in game, gave a "snowshoe" error, was that it?

Simple fix would be to head to
Drive : \\ Steam\steamapps\common\FarCry5\bin\EasyAntiCheat
Launch file EasyAntiCheat_Setup.exe
Should fix whatever the issue is, and start the game afterwards.
