I don't think it's fair to say they don't care about disabled players, they've added colorblind options; but a no clutter option as simple as it sounds is no small amount of work.
It's not unreasonable to presume your audience can see..and I mean that in the nicest way possible; I'm all for helping disabled gamers game.
I want to love this game. Honest to god I do. I love dorfs. I love mining. I don't mind the darkness. It's a mine. It's gonna be dark. And there are mods. But the clutter makes simply navigating impossible! And I know sighted people hate it to a lesser degree because my roommate and friends won't stop ♥♥♥♥♥♥♥♥ about Fungal due to the vines.

As for removing so much it would likely take away too much and idk how viable it would be. I get it, but unfortunately I think it's not so much the devs don't care about people with impairments/disabilities, and more that the theme itself just certain facilities by default and it's hard to accommodate otherwise. Exploring the underground in tight corners where there's a lot of vision obscuring objects is true IRL to some degree, and I wouldn't call a company that helps set up spelunking and cave exploring expeditions as not caring about the vision impaired because of that.
Perhaps someone else here can give you a better suggestion to make the game playable for you, and if not I hope something can be done for it in the future.
I think that the "remove clutter" option would be a great fix for this type of problem
and ghost ship games have added the colourblind options so they do want to make sure everyone can play.
I'm not sure if certain things can be removed that easily though since they are 'physical' objects, and as such part of the terrain. Vines are one thing since you can run through them and they're just a visual thing, but crystals is a whole other thing. You might need entirely different cave generation for that.
Maybe there's a hack/mod for a fullbright mode so there's no darkness whatsoever.
This mod[drg.mod.io] basically did that, but I don't know whether it works anymore unfortunately.

I play at full high contrast and with the flashlight mod Entity Mystic linked. I'd have LIKED to get pics from Fungal or somewhere else but there weren't digs for them. Like I said, it's the clutter. It's too much.
My eyes don't work. I have very thick glasses and ♥♥♥♥♥♥ depth perception thanks to an orbital fracture when I was young. I'm also hearing disabled and I have serious damage to one hand.
You sound like you're describing a mental/intellectual issue and attributing it to eyesight.
