Probably not, that's a bit more complex than it may sound.
Also, it would be morally questionable to do so against the original creators wishes.
That said, I wouldn't be surprised if someone recreates their own version.

Whenever an author deletes mods, then everyone loses because it will be removed from all PC's unless someone made a backup of the physical file(s). The same exact thing occurs with Workshop when people delete mods.
Tell that to the EULA you clicked through without reading it. Which. if anything, was you giving them your permission to do that.
Just note, it does disable the in-game mod UI if you use MINT to install mods. But, I will say that the benefit is, if someone does delete a mod for whatever reason, you won't be without said mod at the very least.
On another, somewhat unrelated note, some EULA's aren't enforceable. But in order to test that, one does have to go to court over it. So either way, it's a lose-lose for the consumer.
