so could it be I just ran around half an hour and did not pass any?
and "shiny" is just a thing... the whole cave is extremely yellow and shiny in my headlight...
PS:
so you say there MUST be some in the starting cave in the 'tutorial'
I thought I looked at each and every wall I could reach...
Yes, starting room. Look around the pillars I guess.

Here's another pic of after the drop pod and its floodlights leave.
The contrast could be stronger, but it's not like it blends into the wall or anything. The popup even shows you exactly what gold looks like.
once you now how it looks (and where to look) it's really easy to find...
- A cave with REALLY tall cliffs and ceilings to show off Scout's mobility and flare range. Maybe in the glacial strata, with conveniently-placed platform plants under mineral veins, to simulate teamwork with an Engie.
- A cave with wide canyons and drops, to show Gunner how to use ziplines. Have it so more enemies spawn than in the other tutorials, and add a tooltip that you have a shield. To teach Gunners that the importance of their shield and firepower.
- A cave with lots of burn-able stuff like spider webs, and more dirt blockages than usual, to show Drillers how to help their team traverse annoying terrain. Could spawn more swarmer tunnels than usual too, to show off his AoE sticky flames power.
- A cave with terrain that generates like an obstacle course, to encourage Engineers to use their platform gun. Broken up by caves shaped in such a way as to encourage Engie to strategically place his sentry guns.
Polish it all off with custom Mission Control voicelines and special pointers (like game-generated pings, to show you where to go), and you'd have a really good tutorial.
Not to mention, it would be fun for veterans to try and break the tutorials with what they've learned, or speedrun them...
