Most games that have DLC removed from them tend to handle that differently. If the code is already in the base game and buying the DLC simply unlocks that part of the game, removing the DLC could either prevent you from using that DLC content or it could stay unlocked, it's hard to say without trying.
A real example I can think of is in Vermintide 2, I heard if you have crafted DLC weapons and then uninstall the DLC, you can no longer craft the DLC weapons, but keep the DLC weapons you already have crafted.
Lastly if the game is put together well, then not having a DLC installed should not corrupt anything as there should be something in place to prevent this.
I hope this answered your questions. An actual developer could probably give you a more exact answer though.
You can test this yourself. Go to your library, right-click Deep Rock > Properties > DLC > uncheck the Supporter DLC, then launch the game.
You won't have the icon by your name, you won't get special Slammers at the bar, but it seems any dwarf who was previously wearing gilded armor will still be wearing it. If you then switch off the gilded armor, you won't be able to re-quip it due to it not showing up in your cosmetic inventory (at least not until the DLC is purchased / turned back on).
Your boyfriend should be just fine.
