I've seen 7 dwarves in one game, worked perfectly fine, although it was a cake walk. (Even at Haz4.)
The only real issue was keeping everyone's ammo up.
Just pick your classes carefully, you want two that work together well. Scout and Engineer are good of course, the Scout can get anywhere there is a foothold, and the Engineer can build footholds wherever he can see, Engineer also has good crowd control, Scout has excellent single-target weapons. Another is Gunner and Driller, Driller can build paths \through rock, and Gunner can build paths over gaps, the Gunner and Driller are pretty much kings of single-target and crowd control respectively.
And I have for the most part had fine experiences with pubs, occasional encounters with players who don't know which end of the pickaxe to hold, and occasional encounters with players who will stop at nothing to put that pickaxe in your eye, but just don't take things too seriously. Some jerk who ruined your mission isn't worth starting the insurrection over, just kick them (if host,) or leave the mission (if they're host, or host doesn't kick them,) and find a new one.
