If you really want to play this through without VR, go ahead, but be aware it may be a more disappointing or frustrating experience.
That sucks, and is a totally legitimate reason to not be able to play. If you want to try the mod mentioned above feel free to give it a try.
I'm not sure you'd get the full benefit of the game as it's very much designed around the VR space in terms of pacing and puzzles but I do hope you can get to experience it somehow.
Really sorry to hear this.
Have you spoken to a doctor about VR and your condition? I only ask because I saw an epilepsy article which said the frame rate aimed for VR is too fast to actively trigger seizures, which is different to normal and standard 3D imagery that aims for about 24fps.
However it could also be more at risk due to the wider fov affecting more of your vision.
Certainly don't attempt it if you are unsure in the slightest and I am certainly no medical expert nor even remotely in the know about the subject, but perhaps a mention to a professional may help you know how safe or unsafe it could be if you have not done so?
if unable, then obviously the flat mods will be your best bet. Unfortunately I can't pretend it is going to be as good, but hopefully you will still have fun with it.
I think the best bet at this point is someone remakes the entire game for flat, changing the design fully but keeping the same story beats.
Perhaps build it in a more traditional play-style. But without the full SDK and needing a lot of work, I'm not sure how soon someone would be able to do so anytime soon.
