Which planets have you tried?
I am thinking of starting a new game on a different planet, I have been doing moon. I think I would lean on harder rather than easier

Loulan is interesting more of a salvage and build style in my opinion.

I think I have decided to give Mimas a try. I like fighting with power and solar but not to an extreeme level, so Mimas is just a bit harder in that area then the moon, so i might give it a shot

That's maybe a good idea. I am playing on Europa right now, and it would be just unreal, were it not that I enabled hydrogen geysers. The amount of solar power that I would need for sustainable energy there would be gross, especially to offset the cold. But the upside of Europa is that it is about the BEST place for the insanely OP gas fuel generator (offset, of course, by the difficulty in keeping it running and the need for fuel). This is why I enabled geysers. With a hydrogen geyser and the oxygen atmosphere, you have free fuel. Your biggest problem at that point is the sick rate at which your batteries are drained in the cold.

Vulcan is rough. It's easy to get a good start, but there is legitimately only 1 way to start without your O2 tank going boom and taking out your entire base.

Create 3x3 base, seal it, vacuum it into a pipe, hence no temp in base. place oxygen into base right before you seal it off and you're good. I'll have a youtube series on Vulcan coming out this week

All of them, of course. I say if you want more of a challenge to try one of the mod worlds in the outer solar system and never use solar because it would be super unrealistic anyway. Other than that, you can have certain goals you build for, and spicing up the build order and restricting yourself from easier stuff you get to do will make the game more challenging anyway.

I was just playing on the Solar System's Io world and not using solar and I had to make a natural gas well over H2 geysers to get a stable power supply, with only my starting welder fuel and the portable gen to start with. It was a lot of fun to get set up and adapt to different things.
