Check out a guy called Jive Turkey on You Tube... in the early days he had some good tutorials on sonar classification, TMA, weapons, and torpedo evasion, along with a lot of other useful stuff.

Also, the manual of the game is a good place to start. It's fairly straight forward, and if you use it whilst going through the training missions, you'll get the hang of the basics in no time.

I already watched a lot from Jive Turkey, the white board series is awesome!
If you're looking for other, more in-depth information, books such as "U.S. Submarines Since 1945: An Illustrated Design History" (Norman Friedman) would be a good place to start.
