I doubt in a vanilla game you'd see either an SSN, SSGN, or SSBN without being tasked to destroy one, ie. find a random one in the wild as opposed to having printed orders in hand to seek and destroy one.
Lots of random SSN patrols but SSG, SSGN, SSBN or in the case of the Golf SSB, no those are all specific mission objectives, you won't see them outside of that, with the exception of the tied up Delta that's in one of the Soviet ports.
Gremika... That's where you'll find the tied up Delta...

The Delta in the Gremika missions can be sunk.
Also in all enemy ports, there are a few moored ships out of the lot that can be sunk...
I beleive about two or three of the ships in the enemy harbours are sinkable, but the majority of them, sadly, are just for show.
Missiles are useless against these ships but get in close, and torpedoes will do the trick.
The ships that can be sunk show up on radar, and can be "highlighted" with the periscope laser. The ones that are just for show, will not be visible on radar, and can't be targeted through the scope...
Manually guiding a torpedo in to kill the ships that are just for show will fail.
The torpedo will just go straight through them, like they are not there...
