Crazy Ivan maneuver
While sneakily chasing a Sierra that was keeping its heading, I think it did a Crazy Ivan to clear its baffles.
Did you notice that kind of behavior during your hunts ?

Yep. More than once I've been tailgating unsuspecting submarines at high speed taking advantage of their baffles only for them to suddenly cut speed and do a very sharp turn.

And more than once I've been caught with my pants down by that manouver.

The AI does it indeed, and you have to be in constant watch of it if you're trying to do a fast sprint behind them to close the distances (I know people aren't used to do it with the modern scenarios but trust me, 1968 scenarios and campaign with the Mk37 as the only viable ASW weapon, you WANT to be as close as possible before firing).

Yep the ai subs definitely clear their baffles every so often. The devs said they tried to make sure the Soviet forces stay true to the doctrine of the time. From what I see they do. Even banging away with active sonar. Some guys complain about the Soviets in game using it so much, but it's what they did in real life.
