So Alt-F4 to exit the game or what?
I couldn't see how to exit...

Hit esc and then go to options.

Esc>Options>Quit to main menu. That will allow you to make a save right there so if you edited your plane before quiting for the time being it should save those changes.
The game will also auto save after a mission.

Although Alt-F4 lets you restart that mission that just went Fubar......

Well since the game only saves at the airbase if you use what Vamadrac said you will still end up back at the airbase prior to accepting the mission you just left.
