Reload for the gunners can be accomplished quickly by selecting them and hitting R. Sending any crew member to the med bay is F. Change the equipment to have at least one medkit in case a member goes down, have a crew member grab it, then send them to the one who's downed.
Do some easy missions a few times (you can run the non-critical missions over and over) and it will start to be less hectic, there's actually more time to react to stuff than it feels like. As you progress, the team will level up and make all the stressful aspects a little easier (such as an auto-tag ability on your radar guy).
It's less about shooting down other planes as it is about keeping the crew alive and getting those bomb/photo targets. I will usually put my bomber in his seat before take-off and leave the bomb-bay doors open with the one bomb I need selected so it's ready and even a failure won't stop me).
It can certainly be hard to keep track of all the stuff at once, but it gets easier if you're give it some time.

Practice and experience will get you back to base though ^_^. Besides, the more challenging the battle, the more rewarding the victory?
It's a good introduction game (and it gets pretty challenging later on) to other 'management' or 'time-management' games in the vein of FTL.
PS Each mission plays out pretty much the same, down to when events pop-up. So if you fail it, you can restart and have a pretty good idea what's about to happen.
After reaching certain levels each class can get a secondary class, you can pick the medic class there (this is located on the training menu). But anyone can revive downed party member you just need to order them to take the medkit off one of the equipement racks and then tell them to heal the downed party member. Medics do this better (even get a nice ability later on) and when they revive someone they revive them to 100% hp.
As for upgrades: armor, then guns, then hydraulics. After that try to get radar level up. I'd also say ignore survival gear, but I save scum by quitting out of the game if things get too bad. If you're playing 'for real', you may have a different opinion.
