What 'ending' was cannon in season 2? ( limit spoilers, please )

Just want to know, since this game has to start somewhere, how does it connect to the previous seasons ending? Is it just skimmed over or do they establish one ending as 'canon' ?

There is no canon ending. Whatever you did, something will happen in order to funnel the story down the same path. Though if you don't import a save and don't generate the story, the ending that will be used in season 3, is the one where Clementine ended up alone with AJ.

There is a flashback where you see the continuation of Season 2 according to what ending you chose to have. This is what I know so far.
