How am I supposed to kill the armored zombies?

They really kill all my enjoyment when they appear.

heavy attacks, headshots, bash/dropkick/grappling hook them to the ground and headstomp them... using 2h weapons on them also seems to be better than 1h.

Easiest way to kill them: Catch them with the hook & stomp their head

The earlier version of the armored zed was somewhat better. Only the head and the torso were armored so you were free to slice and dice their legs and pee on their head after they drop on the ground legless.
Edit: After they annoy me long enough, I whip out my 40 shot pistol and i splash their innarts around.

Arrows and bolts seem to do the job well.

For fun i place C4 or mine and watch the magic of overkill.

The charged spin attack bypasses their armor and doesn't lose cleave like regular attacks, so that's the next easiest method besides just tripping/pulling them + stomp.
