what can I do with them? I get so many from legend chests and I have no idea what they are supposed to do

Last I knew they were for using the Korek charm for weapon repairs and buying stuff from the two special Night Runner vendors along with their respective tokens.

they have several uses, mostly I use them for Korek, but you can buy things from the Chapter Agents, I cant name all the uses since i dont really buy stuff with them, but usually just Korek. Its really easy to farm them too.
