Fun thing I noticed is that it seems as if Dontnod uses the wifes character model for the bus driver in the beginning of the game when Sean gets off the bus

Wanting to be left alone is reasonable. Not wanting to share food with beggars is reasonable. You don't know who they are or why they're begging. He could have been more gentle for sure. He definitely is teaching his daughter some bad manners.
But the fact is when strangers just walk up to you while you're eating, you might pause and wonder what they want or if they're dangerous. You might say they're just kids, but Sean isn't a little kid. He might be a teen, but he's an older teen. And you don't know their motives at all.
Think of it this way...go back to that scene in your head. Imagine if you were out eating with your family and two strangers just walk up to you. They're both dirty and Daniel's shirt has "blood" on it (the family has no clue if it's real or not). How would you feel?

Don't you mean - Why did Dontnod write the story in such a way as to give the husband a bad attitude towards these kids ? Guess you'd have to ask Dontnod. Only they know what they were thinking when they wrote the script if they didn't openly explain it in the game.
Yep, you can manipulate the parents to give them their food if you send in the younger brother
I managed to get food out of them without making Daniel beg so the wife at least seemed nice - just had to talk to her a bit first
